The ricotta is turned into a cream, and not like the ricotta you might find in ravioli or lasagna, for example.

One of the very first recipes I ever saw for cheesecake called for ricotta. I just couldn't bring myself to use ricotta that way, so I kept looking until I found some using cream cheese. I still haven't used ricotta in a dessert.
